Let’s make it
- Heat the oven to 400°F and lightly grease a 9 × 13-inch baking dish. Use a deep dish and leave room below the rim; divide between two dishes if the mixture will not fit.
- If your turkey chorizo is raw, crumble and cook it in a skillet according to its package instructions until it reaches 165°F. If fully cooked, prepare as directed on the package.
- Whisk the eggs and egg whites, then stir in the cottage cheese. Fold in the bell pepper, yellow onion, prepared turkey chorizo, garlic powder, smoked paprika, black pepper, salt, frozen hash browns, and spinach. Spread evenly in the baking dish.
- Scatter the grated Parmesan evenly over the mixture.
- Bake uncovered at 400°F for about 45–55 minutes, until the center is set and reaches 165°F. Check the center with a food thermometer; the large quantity of frozen potatoes may require extra baking time.
- Finish with sliced green onions and allow the bake to rest for 10 minutes. Divide into 6 portions.
